A Fall Comfort Classic Made Healthy 🍂 

Stuffed peppers are a timeless comfort food, but this version lightens things up while keeping all the flavor. Using lean ground turkey, fresh spinach, and rice, this dish is nutrient-dense, easy to chew, and perfect for seniors who want a hearty yet healthy meal.

These Turkey & Spinach Stuffed Bell Peppers can be made ahead, frozen, and enjoyed throughout the week—making them an ideal fall comfort dish for those looking to maintain independence and health at home. 

 

Ingredients (4 servings) 

  • 4 large bell peppers (red, yellow, or green), halved and seeded 
  • 1 tbsp olive oil 
  • 1 small onion, chopped 
  • 2 cloves garlic, minced 
  • 1 lb (450 g) lean ground turkey 
  • 1 cup cooked rice (white or brown) 
  • 2 cups fresh spinach, chopped 
  • 1 tsp dried oregano 
  • ½ tsp paprika 
  • Salt & pepper to taste 
  • ½ cup shredded mozzarella or cheddar cheese (optional) 

 

Instructions 

  1. Preheat oven to 375°F (190°C). 
  1. In a skillet, heat olive oil over medium heat. Add onion and garlic; cook 2–3 minutes until softened. 
  1. Add ground turkey and cook until no longer pink. Stir in cooked rice, spinach, oregano, paprika, salt, and pepper. Cook 2–3 minutes until spinach wilts. 
  1. Place pepper halves in a baking dish. Spoon the turkey mixture evenly into each pepper. 
  1. Sprinkle cheese on top if using. Cover with foil and bake for 25–30 minutes until peppers are tender. 
  1. Remove foil for the last 5 minutes to lightly brown the cheese topping. 
  1. Serve warm with a simple side salad or roasted fall vegetables.
