Comfort in a Bowl for Fall 🍂 

As the weather cools and leaves begin to change, nothing feels better than a warm, nourishing soup. Butternut Squash & Lentil Soup is not only comforting but also packed with fiber, plant-based protein, and vitamins that support healthy aging. It’s simple to prepare, easy to digest, and makes a wonderful meal for seniors or adult children cooking for loved ones.

Ingredients (4 servings) 

  • 1 tbsp olive oil 
  • 1 medium onion, chopped 
  • 2 carrots, chopped 
  • 2 cups butternut squash (peeled and cubed, fresh or frozen) 
  • 1 cup red lentils, rinsed 
  • 4 cups low-sodium vegetable broth 
  • 1 tsp turmeric 
  • ½ tsp ground cumin 
  • Salt & pepper to taste 
  • Optional: fresh parsley or cilantro for garnish 

 

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and carrots; sauté for 3–4 minutes until softened. 
  1. Add squash, lentils, broth, turmeric, and cumin. Bring to a boil, then reduce heat and simmer for 20 minutes until squash and lentils are soft. 
  1. Use an immersion blender (or transfer to a blender) to puree until smooth and creamy. 
  1. Season with salt and pepper to taste. Garnish with fresh herbs if desired. 
  1. Serve warm with whole-grain bread or a light side salad.
