Ingredients (4 servings)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 cups butternut squash (peeled and cubed, fresh or frozen)
- 1 cup red lentils, rinsed
- 4 cups low-sodium vegetable broth
- 1 tsp turmeric
- ½ tsp ground cumin
- Salt & pepper to taste
- Optional: fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and carrots; sauté for 3–4 minutes until softened.
- Add squash, lentils, broth, turmeric, and cumin. Bring to a boil, then reduce heat and simmer for 20 minutes until squash and lentils are soft.
- Use an immersion blender (or transfer to a blender) to puree until smooth and creamy.
- Season with salt and pepper to taste. Garnish with fresh herbs if desired.
- Serve warm with whole-grain bread or a light side salad.
