This Lemon Herb Chicken with Roasted Root Vegetables & Garlic Yogurt Drizzle is a nourishing and delicious meal tailored for seniors. It features tender, oven-roasted chicken breasts infused with lemon and fresh herbs, served alongside a colorful medley of roasted carrots, parsnips, and sweet potatoes. The dish is finished with a creamy, heart-healthy garlic yogurt drizzle that enhances flavor without overwhelming the palate. This meal is gentle on digestion, packed with essential nutrients, and easy to prepare—perfect for maintaining energy and overall well-being. 

 

Ingredients: 

For the Chicken: 

  • 2 boneless, skinless chicken breasts 
  • 2 tbsp olive oil 
  • 1 tbsp lemon juice 
  • 1 tsp lemon zest 
  • 1 tsp dried oregano 
  • ½ tsp dried thyme 
  • ½ tsp garlic powder 
  • ½ tsp onion powder 
  • ¼ tsp salt 
  • ¼ tsp black pepper (optional) 

For the Roasted Root Vegetables: 

  • 1 medium sweet potato, peeled and diced 
  • 2 carrots, sliced into rounds 
  • 1 parsnip, sliced into rounds 
  • 1 small zucchini, sliced into half-moons 
  • 1 tbsp olive oil 
  • ½ tsp dried rosemary 
  • ½ tsp dried thyme 
  • ¼ tsp salt 

For the Garlic Yogurt Drizzle: 

  • ½ cup plain Greek yogurt 
  • 1 tbsp lemon juice 
  • 1 clove garlic, minced (or ¼ tsp garlic powder for a milder taste) 
  • ½ tsp honey (optional, for slight sweetness) 
  • 1 tbsp water (to thin, if needed) 

 

Instructions: 

1. Prepare the Chicken 

  1. Preheat the oven to 375°F (190°C). 
  1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, oregano, thyme, garlic powder, onion powder, salt, and black pepper. 
  1. Coat the chicken breasts evenly with the marinade and let them sit for 10 minutes while preparing the vegetables. 

2. Roast the Vegetables 

  1. Toss the diced sweet potato, carrots, parsnip, and zucchini with olive oil, rosemary, thyme, and salt. 
  1. Spread them out on a baking sheet lined with parchment paper. 
  1. Bake for 25-30 minutes, stirring halfway, until tender and slightly caramelized. 

3. Cook the Chicken 

  1. Heat a skillet over medium heat and lightly grease it with olive oil. 
  1. Sear the chicken breasts for 2 minutes per side until lightly golden. 
  1. Transfer to the oven and bake for 15-18 minutes (or until the internal temperature reaches 165°F/74°C). 
  1. Let the chicken rest for 5 minutes before slicing. 

4. Make the Garlic Yogurt Drizzle 

  1. In a small bowl, whisk together Greek yogurt, lemon juice, minced garlic, and honey. 
  1. Add water, one teaspoon at a time, to reach a smooth drizzling consistency. 

5. Assemble & Serve 

  1. Slice the chicken and serve it over the roasted root vegetables. 
  1. Drizzle with the garlic yogurt sauce for a creamy, refreshing finish. 
  1. Garnish with fresh parsley or a sprinkle of lemon zest if desired.
